Chewy Chocolatey Chip Cookies
This is a first for me. Oh, I've baked plenty of chocolate chip cookies, have no fear. But, I've never developed my own recipe. I've only really changed a few things here and there to make it mine. But this is all mine!
Now, I like my cookies to be chewy and have more substance than a lot of chocolate chip cookies have. So I experimented with using bread flour. It doesn't give the cookies much height as you can see in the picture. But they were chewy, buttery, and yummy. Also, I've experimented with using melted butter rather than softened butter. I like the sheen they give to the finished cookies and it's just so easy.
Stir together the flours, salt, and baking soda in a medium bowl.
In the bowl of a standing mixer blend the sugars and melted butter. When they are completely combined add the eggs and egg yolk one at a time. Then add the vanilla.
Add one third of the flour mixture until no white streaks are left. Add another third till combined. Then add the remaining. Should be nice and thick.
Add 16 oz (yes a whole pound!) of chocolate chips!
We want plenty of chocolate in these cookies!
Use a 1 3/4 inch cookie scoop to scoop onto a cookie sheet. Bake at 375 for 12-13 minutes. Watch the cookies carefully, bread flour will make it brown faster. I like pretty brown cookies, so if you like lighter cookies bake for less time.
My daughter took these to a house full of teenagers and they were gobbled up in no time!

Chewy Chocolately Chip Cookies
2 cups all purpose flour
1 cup bread flour
1 teaspoon salt
1 teaspoon baking soda
1 cup butter, melted and cooled
1 1/4 cup brown sugar
1/2 cup white sugar
2 eggs
1 egg yolk
1 tablespoon vanilla
16oz chocolate chips
1. Preheat the oven to 375 degrees F. Line cookie sheets with parchment paper or silpat.
2. Combine the flours, salt, and baking soda in a medium bowl. Set aside.
3. In a standing mixer blend together the sugars and the melted butter. Add the eggs and egg yolk one at a time. Then add the vanilla.
4. Add one third of the flour mixture to the butter mixture. Blend until no white streaks can be seen. Add the remaining flour mixture, one third at a time, till completely blended.
5. Stir in the chocolate chips.
6. Use a 1 3/4 inch cookie scoop and place the cookie dough balls 2 inches apart on the covered cookie sheet.
7. Bake for 12-13 minutes, watching the cookies carefully so as not to burn.
